Generally speaking, when I do genderswitch, I think of the AU as -- how does being and identifying as the opposite gender and sex change a character while actually keeping them the same? So while canon!Fay is androgynous and sometimes feminine, he's still a guy (or, at much as a CLAMP prettyboy can be XD) and acts accordingly -- I think a girl!Fay would be the same! Only different! ... I swear it makes more sense in my head.
